One of the beautiful things about sourdough is how you can save it for later. Your sourdough can last on the counter for a week in an air-conditioned home, 2 weeks in the refrigerator and up to 3 months in the freezer. When I freeze my extra loafs, I wrap them in cellophane, then wrap them in aluminum foil. They are always just as fresh as when I put them in the freezer!
